V Palm Springs Offers Poolside Company with Elixir

Menu features Asian-Fusion barbecue along with cocktails leaning toward "modern Tiki Tropical"

V Palm Springs has some company for you at the pool.

The newest hotel to open in South Palm Springs recently debuted Elixir Pool Bar & Grill as the first of two dining concepts at this highly-anticipated hotel and event space. The second, Solstice, a 70 seat indoor restaurant with an outdoor lounge, will start serving in October following the opening of the full hotel in June.

The “In Love with the Cacao” cocktail served at Elixir may have you going coconuts.

Elixir will feature a weekend brunch menu and an all-day menu focused on Asian-Fusion barbecue. Munch on the likes of Grilled Pineapple Dip or Green Curry Guacamole to accompany a cool beverage.

For a protein-packed option to fuel languorous, lingering days in the sun, the Tuna Tartare Cigars might be the perfect ratio of crispy won-ton exterior to fresh, fishy interior.

Avocados are elevated to a new level with roasted chiles, curry and charred lime. Served with plantain chips.

A mixology program led by partner, Shannon Stiggins (a mixologist at top New York restaurants and hotels), will quench parched guests. The cocktail selection has been carefully curated to lean toward “modern Tiki-Tropical” offerings.

Perhaps a Cucumber Crush, a co-mingling of citrus vodka, cucumber, pineapple and lime juices with the exotic notes of sweet syrup, almond and warming spices from the addition of Velvet Falernum?

For sipping synchronicity, consider the signature Elixir Sling, a classic gin drink of the past, made modern with cherry and orange liqueurs, charred pineapple, lime juice and bitters. Or how about a Small Sombrero cocktail, keeping things “chile” with arbol-infused tequila, cucumber, ginger, pineapple and lemon juice?

Fried Rice Noodles are fit for vegan hedonistic indulgence.

After a day of pool, sun and revelry, join for a sunset poolside cocktail and choose from several large plate menu offerings. Give your “buns” a run with Asian-Fusion takes on burgers and hot dogs, like the Pork Burger garnished with banana chili, grilled pineapple and lemongrass aioli or the Bahn Mi Hotdog, a pork sausage with cucumber chutney and hoisin. Or go meatless with Fried Rice Noodles with sautéed veggies, avocado in a sweet and salty sambal sauce.
